Beef Rump Steak with Green Peppercorn Sauce
Ever wanted to know how to re-create that lovely Rump Steak with Green Peppercorn Sauce at home? It’s easier than you think.
- 1kg Ritchies beef rump steak
- 2 tablespoons olive oil
- sea salt and freshly ground black pepper
Sauce
- 25g butter
- 1 medium clove garlic, crushed
- 300ml thickened cream
- ½ cup low salt beef stock
- 2 teaspoons Dijon mustard
- 55g can green peppercorns in brine, drained
- sea salt and freshly ground black pepper
Method
- Rub olive oil into the steak and season generously on both sides with salt and pepper.
- Preheat a grill plate or frying pan to hot. Fry the steak turning once till done to your liking (for about 2-3 minutes on both sides for medium rare). Remove from the grill and set aside covered in foil to rest while you make the sauce.
- In a medium frying pan on a medium heat, add the butter and garlic, cook for about a minute or until the garlic smells fragrant.
- Stir in the cream, beef stock, and mustard then whisk together. Add the green peppercorns and bring to a fast simmer. Reduce until thick. Pour in any juices from the resting steak. Stir, add a generous grind of black pepper and check the seasoning.
- Cut the steak into thick slices and serve drizzled with the green peppercorn sauce, with thick potato wedges and a fresh salad.
For a richer sauce, add 2 tablespoons of brandy along with the beef stock
