Here’s a tasty and fast beef soy asparagus stir-fry which the whole family will love. You can have this easy stir fry on the table in just over 20 minutes which means dinner is sorted any night of the week!

  • 500g Ritchies beef stir-fry
  • 1 tablespoon cornflour
  • 2 tablespoons peanut or coconut oil
  • 2 medium garlic cloves, peeled and sliced
  • 1 tablespoon of finely grated fresh ginger
  • 2 tablespoons soy sauce
  • 3 tablespoon Kecup manis (sweet soy sauce)
  • ½ cup water
  • 2 bunches asparagus, ends trimmed off
  • ½ red capsicum, deseeded
  • 200g green beans
  • 4 spring onions
  •  2 sticks celery, thinly sliced

Cut the asparagus, spring onions, and beans into 4cm lengths. Cut the capsicum into batons about 4 cm long.

Spread the beef stir-fry strips on a plate dust the very lightly with cornflour. Place the soy, kecup manis and water in a small jug and stir to combine.

In a large wok or frying pan on a very high heat, add the oil and allow it to get very hot.  Working fast, add the beef stir fry, stirring constantly until it’s mostly brown and just starting to caramelize on the edges – about 2 minutes in a very hot wok.

Add the garlic and ginger, cook for about 15 seconds stirring constantly. Add all the vegetables, except the spring onions, and cook for about 30 seconds. Pour in the soy and water and add the spring onions. Stir until the sauce thickens. Serve immediately with steamed rice.

Serves: 4. Preparation time: 15 minutes. Cooking time: 7 minutes.
