Crispy chicken wings

These crispy chicken wings with honey garlic sauce are a guaranteed hit with the crowds. Crisp on the outside with the meat still tender and best of all, there is no need for messy, greasy deep-frying the chicken wings with our delicious baked version.

 for the chicken wings

  • 1kg chicken wings
  • 2 tablespoons baking powder (NOT baking soda)
  • 1 teaspoon sea salt

for the dipping sauce

  • 2 tablespoons honey
  • 1.5 tablespoon soy sauce
  • 1 tablespoon white rice wine vinegar
  • 1 garlic clove, minced

to serve 

  • baby cos lettuce leaves to serve

Preheat the oven to 120°C. Line a baking sheets with foil then sit a wire rack (such as a cooling rack) on top so that there is clear space between the rack and the foil. Remove the tips from the chicken wings, then cut each wing in half at the joint. Dry well with paper towel. Place the baking powder and salt into a freezer bag, then add the chicken pieces and shake until they are well coated. Distribute the wings evenly over the wire rack and cook in the oven for 30 minutes. Turn the oven up to 220°C and cook for a further 45-55 minutes, turning the tray once during cooking. The wings should be golden brown and crisp to the touch when tapped.

Whilst the wings are cooking, make the dipping sauce. Combine all of the ingredients in a small bowl and mixing well. Serve hot with cos lettuce leaves and the dipping sauce. Serves 4-8
