Know that old saying ‘always start your day with a good breakfast’… This yummy grain free baked muesli is full of all the good stuff that’s great to include in your diet. Plus it’s VERY easy to make, so you’ll know exactly what your eating. You’ll find all the ingredients in the Healthy Living section of your local Ritchies IGA supermarket.

  • 1 tablespoon Absolute organic coconut oil
  • 1 tablespoon hulled tahini
  • 3 tablespoons Absolute organic maple syrup
  • 1 cup organic pecan nuts
  • 1 cup organic almonds
  • 1 cup organic shredded or flaked unsweetened coconut
  • ½ cup sunflower seeds
  • ½ cup pepitas (pumpkin seeds)
  • 3 tablespoons organic linseeds
  • 2 tablespoons organic chia seeds
  • ½ teaspoon Celtic salt (optional)

to serve (optional)

  • 1 small banana sliced
  • ½ cup berries
  • cow or soy milk

Preheat oven to 160oC

Place the maple syrup, coconut oil and tahini in a small deep microwave proof dish, cover and microwave on low for about 15 seconds or until the coconut oil melts. Place all the seeds and nuts except the chai seed, in a large bowl. Pour in the coconut oil, maple syrup mixture and stir until fully coated.

Line a large shallow baking tray with baking paper, spread the nut mixture out in a thin layer. Bake in the preheated oven for about 10 minutes, remove, stir and return to the oven for a further 10 minutes or until lightly toasted and golden. Remove from the oven allow to cool fully. Stir through the chia seed and store in a airtight container for up to 3 weeks. Serve with fresh berries and banana or any other fruit you like and cow or soy milk.

Makes 15 single servings. Preparation time 10 minutes. Cooking time 20 minutes.
