It’s BBQ season! These Lamb Feta and Mint burgers are sure to be a hit at your next BBQ and best of all they’re quick and easy to make!
Lamb Feta & Mint Burgers
- 500g Ritchies lamb mince
- 1 small red onion, finely diced
- ¼ cup finely chopped fresh mint leaves
- ½ teaspoon ground cumin
- 100g feta cheese, finely crumbled
- 1 egg, lightly beaten
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- olive oil
to serve
- 4 burger rolls, lightly toasted
- 4 tablespoons aioli or mayonnaise
- 8 butter lettuce leaves
- 2 ripe tomatoes, sliced
- a few extra mint leaves (optional)
Method –
In a large bowl add the lamb mince and all the other burger ingredients.
Stir with a large metal spoon or mix with your clean hands until the mixture gets slightly sticky.
Shape into four large patties. Cover and chill for around ½ hour.
Pre heat a barbecue or grill plate to medium hot. Brush the burgers with a little olive oil and cook to your liking (about 3 minutes on the first side and 2 minutes on the other side for medium). Cover with foil and allow to rest for about half the cooking time.
Spread both sides of the toasted rolls with aioli or mayonnaise. Add the hot burgers, tomato slices, lettuce and a few mint leaves if using them. Serve immediately.
