- 8 Ritchies skinless chicken thigh fillets
- 2 tablespoons sesame oil
- 2 teaspoons cornflour
- 2 large lemons
- 2 tablespoons honey
- 2 tablespoons light soy sauce
- 1 tablespoon sesame seed
- Sea salt and freshly ground black pepper
To serve
- Egg noodles
- Pal choi /and or sugar snap peas

Preheat oven to 200oC
Arrange the chicken thighs in tidy rolls, in a shallow oven proof dish and drizzle with sesame oil. Season generously with salt and pepper and roast in the preheated oven for 20-25 minutes. While the chicken roasts make the glaze. Use a vegetable peeler to remove very thin sections of the yellow part of the peel of 1 of the lemons. Using a very sharp knife cut the peel into a very fine julienne. (fine strips)
In a medium bowl add the cornflour, slowly stir in the juice of both lemons, julienned lemon peel, honey, soy and sesame seeds. After 25 minutes remove the chicken from the oven, stir the glaze into the juices around the chicken and use tongs to roll the chicken in the sauce. Return to the oven and cook for another 10 minutes stirring occasionally until the sauce thickens. Serve with steamed green vegetables and rice or noodles.
Serves 4. Preparation 10 minutes. Cooking time 40 minutes.
