sweet chilli chicken stir-fry with Asian greens and hokkien noodles
- 500g stir-fry chicken strips
- 1 tablespoon oil
- ½ teaspoon sesame oil
- 1 clove garlic, crushed
- 1 onion, cut into fine wedges
- 1 red capsicum, sliced
- 1 bunch baby bok choy, sliced
- 100g snow peas, sliced
- 1 bunch broccolini, sliced
- 300g fresh hokkien noodles, soaked
- ¼ cup chicken stock
- ½ cup sweet chilli sauce
- lime wedges to serve
- coriander leaves for garnish
In a bowl, combine the chicken strips, oils and garlic. Mix well. Heat a wok or large frying pan oven a high heat and stir the chicken until well browned around 4 -5 minutes. Remove & set aside. Add the vegetables to the wok and stir-fry until vegetables are bright. Add the noodles along with the chicken stock and chilli sauce. Stir-fry 2 -3 minutes. Return the chicken to the wok and stir-fry for a further 2 minutes. Serve stir- fry hot with a squeeze of lime topped with coriander leaves. Serves 4 -6
Tips: When you’re stir frying, make sure you cut all the vegetables about the same size so they cook around the same time.
Did you know: Broccolini is a green vegetable similar to broccoli but with smaller florets and longer, thin stalks. Often misidentified as young broccoli, it is a hybrid of broccoli and kai-lan, both cultivar groups of Brassica oleracea.Wikipedia
