Run out of time to make dessert? These cherry berry nests are the best cheats pudding and they’re very fast to make. If you have to, you can even pretend you make the meringues yourself.

- 6 large meringue nests

- 200ml pot thickened cream
- 1 tablespoon pure icing sugar, sifted
- 1 teaspoon vanilla extract
- 10 sliced strawberries.
- ½ cup raspberries
- ½ cup blue berries
- 12 cherries

Place the cream in a stand mixer and whip till thick. Remove the bowl from the mixing stand and using a large metal spoon fold in the vanilla essence and sifted icing sugar. Then fold 2/3rd of all the berries until the juice just starts running so the cream is marbled with berry juice.
On the plates you want to serve them on add the meringue nests piled high with the berry cream mixture and decorate with a scatter of the remaining berries and a couple of cherries.
Serve chilled immediately or chill and serve within the hour.
