Spicy, tender and zesty. These chilli salt chicken wings are so easy to cook and are just perfect as a snack or with a really cold lager on a hot day. This dish makes an affordable easy lunch or dinner all year round. You can vary the about of chilli depending on your own tastes.

- 1 kg Ritchies chicken wings, tips removed and cut in half
- 2 tablespoons fish sauce
- 2 tablespoons sesame oil
- 2 tablespoons sesame seeds
- 2 teaspoons sea salt crystals
- 2 teaspoons chilli flakes
for the chilli sauce
- ½ cup sweet chilli sauce
- juice and zest from 1 small lime
- ¼ cup fresh coriander leaves, roughly chopped (optional)
to serve
- extra coriander leaves
- 1 red chilli, finely sliced

Pre heat the oven to 220oC or hooded BBQ to medium high
Place the wings in a large bowl with the fish sauce and the sesame oil. Stir thoroughly to ensure each wing piece is well coated. Transfer them to a large oven tray spread out in a single layer. Scatter with salt crystals, sesame seeds and chilli flakes Bake in either the preheated oven on the tray for about 40 minutes or directly on the BBQ hot plate for about 15-20 minutes turning often or until they are golden brown, cooked through and the meat is very tender.
While the wings are baking make the chilli sauce, simply stir together the sweet chilli sauce, lime juice and coriander leaves. Note: you can add more hot fresh chilli here, if you like things spicy.
To serve, plate up the cooked wings, scatter with a few slices of fresh red chilli and chopped coriander leaves. Serve the sauce in a little bowl on the side for dipping.
