Our crispy chicken burger with green apple and fennel slaw is incredibly tasty. Tender chicken breast encrusted in a crisp golden casing paired with a crunchy and tangy slaw perfectly balances the flavours and textures of this delicious burger.

- 2 large chicken breasts, skin off
- 4 heaped tablespoons corn flour
- sea salt and black pepper
- 1 teaspoon dried oregano
- sunflower or vegetable oil to shallow fry
- 8 small flat breads (naan or pita)
for the slaw
- ½ medium sized bulb of fennel, thinly sliced
- 1 granny smith apple, cored and thinly sliced
- ½ red capsicum, deseeded and thinly sliced
- 2 tablespoons mayonnaise
- 1 tablespoon sweet chilli sauce
- sea salt and black pepper
to serve
- 1 large handful of salad leaves
In a large bowl mix together sliced fennel, apple, capsicum, mayonnaise and sweet chilli sauce. Season to taste, cover with cling film and refrigerate until ready to use.
Trim any fat off the chicken breasts and cut in half, length ways. Place between two sheets of cling film or baking paper and gently beat flat (about 1cm thick) using a rolling pin or meat tenderiser. Add the salt & pepper and oregano to the corn flour, then sprinkle generously over both sides of the flattened chicken breasts. Shake the excess corn flour off each piece of coated chicken. On a medium high heat, add enough oil to cover the base of a large frying pan. When the oil starts to simmer, fry the chicken pieces in batches, turning at least once until golden, crisp and cooked through. Drain on absorbent kitchen paper. Serve immediately between warmed flat breads with a generous spoon of apple & fennel slaw and a few salad leaves. Serves 4.
