Sugar puffs with berries and mascarpone, the easiest dessert you can make. These Sugar puffs make the most of the last luscious summer berries.

- 2 sheets premade butter puff pastry
- 1 egg lightly beaten
- 2 tablespoons vanilla sugar*
- 2 cups of berries (we used strawberries, raspberries and blue berries)
- 3 tablespoons orange juice
- 1tablespoon caster sugar
for the vanilla mascarpone cream
- 250g mascarpone
- 1 teaspoon vanilla extract
- 1 tablespoon caster sugar
to serve
- mint leaves (optional)

Preheat oven to 200oC
Line a baking tray with baking paper.
Line a large board or bench top with baking paper. Place one of the sheets of puff pastry on the paper. Brush with beaten egg. Top with the second sheet of pastry. Using a 10-12cm fluted edge cookie cutter, cut 4 rounds of pastry. Transfer to the lined baking tray. Brush with egg and sprinkle each generously with vanilla sugar. Bake for about 12 minutes or until the sugar puffs have risen dramatically, are crisp and golden brown.
Remove from the oven and allow to cool. While the sugar puffs cook, hull the strawberries and cut them in quarters, add the other berries, orange juice and 1tablespoon of caster sugar. Mix well, cover with cling film and refrigerate for about 10 minutes or until the berry juices run.
Just before serving, mix the mascarpone, vanilla extract and 1 tablespoon of caster sugar (you just want to slightly sweeten the mascarpone)
Plate each sugar puff with a spoonful of vanilla mascarpone and a spoonful of berries. Serve immediately.
